Asian Chicken and Rice with Miso, Soy, and Ginger

Ingredients:

For the Chicken Marinade:

  • 1.5 pounds boneless, skinless chicken thighs cut into bite-sized pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons white miso paste
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon vegetable oil

For the Rice:

  • 2 cups jasmine rice, rinsed and drained
  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil

For the Stir-Fry:

  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • Sesame seeds and chopped green onions for garnish

Instructions:

1. Marinate the Chicken:

  • In a bowl, whisk together soy sauce, miso paste, grated ginger, minced garlic, rice vinegar, sesame oil, honey (or brown sugar), and vegetable oil to create the marinade.
  • Add the chicken pieces to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes, or ideally, refrigerate for a few hours to allow flavors to meld.

2. Cook the Rice:

  • Combine rinsed jasmine rice, chicken broth, soy sauce, and sesame oil in a medium-sized saucepan.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.

3. Cook the Chicken:

  • Heat a large skillet or wok over medium-high heat.
  • Add vegetable oil to the skillet, then add the marinated chicken pieces. Cook until the chicken is browned and cooked through about 6-8 minutes.

4. Stir-Fry Vegetables:

  • In the same skillet, add a bit more oil if needed. Stir-fry the broccoli, red bell pepper, carrot, and green onions until they are tender-crisp, about 5 minutes.

5. Combine and Serve:

  • Add the cooked rice to the skillet with the stir-fried vegetables, tossing everything together.
  • Pour soy sauce and rice vinegar over the mixture and stir until well combined.
  • Garnish with sesame seeds and chopped green onions.
