Ingredients:

- 2 cups jasmine rice, rinsed and drained
- 4 cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
For the Stir-Fry:
- 1 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 3 green onions, sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- Sesame seeds and chopped green onions for garnish
Instructions:
1. Marinate the Chicken:
- In a bowl, whisk together soy sauce, miso paste, grated ginger, minced garlic, rice vinegar, sesame oil, honey (or brown sugar), and vegetable oil to create the marinade.
- Add the chicken pieces to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes, or ideally, refrigerate for a few hours to allow flavors to meld.
2. Cook the Rice:
- Combine rinsed jasmine rice, chicken broth, soy sauce, and sesame oil in a medium-sized saucepan.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed.
3. Cook the Chicken:
- Heat a large skillet or wok over medium-high heat.
- Add vegetable oil to the skillet, then add the marinated chicken pieces. Cook until the chicken is browned and cooked through about 6-8 minutes.
4. Stir-Fry Vegetables:
- In the same skillet, add a bit more oil if needed. Stir-fry the broccoli, red bell pepper, carrot, and green onions until they are tender-crisp, about 5 minutes.
5. Combine and Serve:
- Add the cooked rice to the skillet with the stir-fried vegetables, tossing everything together.
- Pour soy sauce and rice vinegar over the mixture and stir until well combined.
- Garnish with sesame seeds and chopped green onions.
