Clams and Pasta in White Wine Sauce:

Ingredients:

  • 1 pound linguine or spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 cup dry white wine
  • 1 cup chicken or vegetable broth
  • 2 pounds fresh clams, scrubbed and cleaned
  • 1/2 cup fresh parsley, chopped
  • Salt and black pepper, to taste
  • Lemon wedges for serving
  • Grated Parmesan cheese (optional)

Instructions:

  1. Prepare the Pasta:
    • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Clams:
    • Rinse the clams under cold running water to remove any grit or sand.
    • Discard any cracked or open clams that do not close when tapped.
  3. Saute the Aromatics:
    • In a large skillet or pan, heat olive oil over medium heat.
    • Add minced garlic, chopped onion, and red pepper flakes. Sauté until the onions are translucent and the garlic is fragrant about 2-3 minutes.
  4. Cook the Clams:
    • Pour the white wine and chicken or vegetable broth, and bring the mixture to a simmer.
    • Add the cleaned clams to the skillet, cover with a lid, and cook for about 5-7 minutes or until the clams open. Discard any clams that do not open.
  5. Finish the Dish:
    • Season the sauce with salt and black pepper to taste.
    • Add the cooked pasta to the skillet and toss until it’s well coated in the sauce.
    • Sprinkle chopped fresh parsley over the pasta and clams.
  6. Serve:
    • Divide the pasta and clams among serving plates.
    • Drizzle with extra olive oil if desired.
    • Serve with lemon wedges on the side for a fresh citrus flavor.
    • Optionally, garnish with grated Parmesan cheese.
  7. Enjoy:
