Instructions:

Prepare the Dashi: In a pot, bring the water to a gentle boil. Add the bonito flakes and simmer for 5 minutes. Turn off the heat and let it steep for another 5 minutes. Strain the liquid through a fine-mesh sieve or cheesecloth to remove the bonito flakes, resulting in a clear dashi broth.

Cook the Onions: Return the strained dashi broth to the pot. Add the sliced onions and bring the broth to a simmer. Cook the onions for about 5-7 minutes until they become tender and translucent.
