Ingredients:

2 pounds (about 900g) potatoes (such as Russet or Yukon Gold), washed and cut into 1-inch cubes
4 cloves of garlic, minced
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Optional: chopped fresh parsley for garnish
Instructions:

Preheat the oven: Preheat your oven to 400°F (200°C).

Prepare the potatoes: Wash them thoroughly and cut them into 1-inch cubes. You can peel the potatoes, but leaving the skin on adds extra texture and flavor.

Season the potatoes: In a large mixing bowl, combine the potato cubes, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper. Toss everything together until the potatoes are evenly coated with the seasoning.

Arrange on a baking sheet: Spread the seasoned potatoes in a single layer onto a large baking sheet. Ensure they’re not overcrowded; use two baking sheets if necessary.
