Ingredients:
- 8 oz rice noodles
- 1 lb medium shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 1 cup chicken or vegetable broth
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 zucchini, sliced
- 1 cup snap peas, trimmed
- Fresh cilantro and lime wedges for garnish
Instructions:
- Cook the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil over medium-high heat in a large skillet or wok. Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger to the skillet, cooking for another minute until fragrant.
- Stir in the red curry paste and cook for 2-3 minutes to release its flavor.
- Add the shrimp to the skillet and cook until they turn pink and opaque.
- Pour in the coconut milk, chicken or vegetable broth, fish sauce, soy sauce, and brown sugar. Stir well to combine and bring the mixture to a simmer.
- Add the sliced red bell pepper, julienned carrot, zucchini, and snap peas to the skillet. Simmer for 5-7 minutes or until the vegetables are tender-crisp.
- Taste the curry broth and adjust the seasoning, adding more fish sauce, soy sauce, or sugar as needed.
- Add the cooked rice noodles to the skillet and toss everything together until the noodles are well coated with the curry sauce.
- Serve the curry noodle shrimp hot, garnished with fresh cilantro and lime wedges.
