Delicious recipe for Curry Noodle Shrimp:

Ingredients:

  • 8 oz rice noodles
  • 1 lb medium shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup chicken or vegetable broth
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 1 cup snap peas, trimmed
  • Fresh cilantro and lime wedges for garnish

Instructions:

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil over medium-high heat in a large skillet or wok. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and grated ginger to the skillet, cooking for another minute until fragrant.
  4. Stir in the red curry paste and cook for 2-3 minutes to release its flavor.
  5. Add the shrimp to the skillet and cook until they turn pink and opaque.
  6. Pour in the coconut milk, chicken or vegetable broth, fish sauce, soy sauce, and brown sugar. Stir well to combine and bring the mixture to a simmer.
  7. Add the sliced red bell pepper, julienned carrot, zucchini, and snap peas to the skillet. Simmer for 5-7 minutes or until the vegetables are tender-crisp.
  8. Taste the curry broth and adjust the seasoning, adding more fish sauce, soy sauce, or sugar as needed.
  9. Add the cooked rice noodles to the skillet and toss everything together until the noodles are well coated with the curry sauce.
  10. Serve the curry noodle shrimp hot, garnished with fresh cilantro and lime wedges.
