Creamy Chicken and Almond Orzo Bake
Ingredients:
4 boneless, skinless chicken breasts
Salt and black pepper to taste
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup baby spinach, chopped
1 cup orzo pasta
2 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 cup slivered almonds, toasted
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup mozzarella cheese, shredded
Fresh parsley for garnish
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).

Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides. Heat olive oil over medium-high heat in a large oven-safe skillet. Add the chicken breasts and sear for 2-3 minutes on each side or until golden brown. Remove the chicken from the skillet and set aside.

Saute Vegetables:
In the same skillet, add chopped onion and minced garlic. Sauté until the onion is translucent. Add cherry tomatoes and chopped spinach, and cook for 2-3 minutes until the spinach wilts.

Cook Orzo:
Stir in the orzo pasta, dried oregano, dried thyme, and smoked paprika. Pour in the chicken broth and bring to a simmer. Cook for 5-7 minutes or until the orzo is partially cooked.

Add Almonds and Cream:
Mix in the toasted slivered almonds and pour in the heavy cream. Stir well to combine, creating a creamy and nutty orzo mixture.

Combine Ingredients:
Nestle the seared chicken breasts into the creamy orzo mixture in the skillet. Sprinkle Parmesan and mozzarella cheese over the chicken and orzo.

Bake:
Transfer the skillet to the preheated oven and bake for 25-30 minutes until the chicken is cooked, the cheese is melted, and the skillet is golden brown.

Garnish and Serve:
Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley and serve directly from the skillet.
