Hungarian-Style Cheese Meat Casserole

Ingredients:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 tablespoons tomato paste
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon caraway seeds
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 lb egg noodles, cooked according to package instructions

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Meat Mixture: Heat the vegetable oil over medium heat in a large skillet. Add the chopped onions and garlic, sautéing until softened. Add the ground beef and pork, breaking it apart with a spoon, and cook until browned. Drain excess fat if necessary.
  3. Add Vegetables: Stir in the diced red and green bell peppers and the sliced mushrooms. Cook for an additional 5 minutes until the vegetables are tender.
  4. Season and Add Tomato Paste: Sprinkle the paprika, caraway seeds, salt, and pepper over the meat mixture. Add the tomato paste, stirring well to combine. Let the mixture simmer for 5-7 minutes, melding the flavors.
  5. Combine Sour Cream and Cottage Cheese: Mix the sour cream and cottage cheese in a separate bowl until well combined.
  6. Assemble the Casserole: In a large mixing bowl, combine the cooked egg noodles, meat mixture, and the sour cream-cottage cheese mixture. Mix thoroughly to ensure an even distribution of ingredients.
  7. Layer with Cheese: Grease a large casserole dish and layer half of the noodle-meat mixture. Sprinkle half of the shredded mozzarella and cheddar cheese over the layer. Repeat with the remaining noodle-meat mixture and top with the remaining cheese.
  8. Bake: Place the casserole dish in the oven and bake for 25-30 minutes or until the cheese is golden and bubbly.
  9. Serve: Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh herbs like parsley, if desired.
