Lemon Dill Tortellini

Ingredients:

  • 1 pound (about 450g) cheese or spinach-filled tortellini
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried dill (or one tablespoon fresh dill, chopped)
  • Salt and black pepper, to taste
  • Grated Parmesan cheese for serving (optional)
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the Tortellini:
    • Cook the tortellini in a large pot of salted boiling water according to the package instructions. Drain and set aside.
  2. Prepare the Lemon Dill Sauce:
    • Melt the butter and olive oil over medium heat in a large skillet.
    • Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant and slightly golden.
  3. Combine with Tortellini:
    • Add the cooked tortellini to the skillet, tossing gently to coat the pasta with the garlic-infused butter and oil.
  4. Add Lemon and Dill:
    • Add lemon zest, lemon juice, and dried dill to the skillet. If using fresh dill, add it at this stage as well.
    • Season with salt and black pepper to taste. Toss the tortellini to distribute the flavors evenly.
  5. Serve:
    • Once the tortellini is well coated and heated through, transfer it to serving plates or a platter.
    • Optionally, sprinkle with grated Parmesan cheese and chopped fresh parsley for added flavor and presentation.
  6. Enjoy:
    • Serve the Lemon Dill Tortellini immediately while it’s hot. It pairs well with a green salad or steamed vegetables.
