Ingredients:

  • 1 package (about 20 ounces) of your favorite vegan or dairy-free ravioli
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 red bell peppers, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup non-dairy creamer (such as almond, coconut, or soy creamer)
  • 1 tablespoon nutritional yeast (optional for a cheesy flavor)
  • Salt and black pepper, to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions:

  1. Cook the Ravioli. Cook the ravioli in a large pot of salted boiling water according to the package instructions. Drain and set aside.
  2. Prepare the Sauce
    • In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened and translucent.
  3. Add Red Peppers
    • Add sliced red bell peppers to the skillet and continue to sauté until the peppers are tender about 5-7 minutes.
  4. Add Garlic and Creamer
    • Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
    • Pour in the non-dairy creamer and nutritional yeast (if using). Stir well to combine.
  5. Season and Simmer
    • Season the sauce with salt and black pepper to taste. Allow the sauce to simmer for 5-7 minutes, allowing it to thicken slightly.
  6. Combine with Ravioli
    • Gently fold the cooked ravioli into the creamy red pepper sauce, ensuring the ravioli are well-coated.
  7. Serve
    • Transfer the ravioli and sauce to serving plates. Garnish with chopped fresh basil or parsley.
