Simple and delicious recipe for a moist almond cake:

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 cup sliced almonds, for topping (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add Eggs and Extracts: Add the eggs one at a time, beating well after each addition. Stir in the almond extract and vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
  5. Alternate Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and milk. Begin and end with the dry ingredients. Mix until just combined.
  6. Pour Batter into Pan: Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
